This first clip is from the episode Spectre of the Gun. This is footage of a model showing the Melkotian buoy the Enterprise encounters. A garbage matte would be used to remove the hands and the operating mechanism.

Shot under protest!
This is written on a slate when there is a disagreement on how a scene is photographed. It may be on how an actor reads a line, how something is photographed or a concern on stage direction. The reason it's written on the slate is that it provides evidence to the fact that if the person protesting is correct, they should not be held responsible if the scene fails to meet expectations.
